WThis is a home-style take on a drink found on a new menu. Designed as a batch pre-mixed that's bursting full of flavours associated with Christmas time, making it excellent for a holiday party. Any leftover syrup to use in brunch beverages, puddings, or to mix another batch of the drink.

The Bikini Cocktail

Yields 10 people

For the Clementine Syrup (makes 750ml)

300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g granulated sugar

For the Drink (yields 850ml, serving 10)

400ml good quality vodka
100ml classic gin
150ml peach liqueur
200ml clementine syrup (from the recipe above)
Fresh cranberries, for garnish
Mandarin essential oil, for finishing

Directions

To prepare the Cordial: Place the listed components into a saucepan, heat until it reaches a simmer, agitating until the sugar dissolves. After that, take off the burner and leave to cool down fully. Decant into a sealable bottle, seal and refrigerate it in the fridge, it can be stored for up to four weeks.

Preparing the Batch Mix: Mix all the liquid ingredients in a sizeable container, leave to sit for 60 minutes, then filter it best through a fine cloth, to ensure it's fully clarified.

For serving: Pour 85ml of your premix into your cocktail shaker filled with ice, and stir carefully for one minute until cold. Strain into a chilled martini glass or a similar vessel, top with the cranberries and complete it by giving it a quick spritz of the essential oil over the drink.
